Fresh and juicy prawns can take a dish from bland to brilliant with just a few ingredients.
Stir cooked prawns through a stir-fry at the last minute to easily add some texture and flavour to your dish.
- Roast some chunky Mediterranean vegetables on a high heat with a sprinkle of sumac and oregano until soft with crispy edge, about 20 minutes at 200 degrees should do it.
- Five minutes before they are done add some raw prawns to the tray and pop back in the oven until cooked.
Perfect with a big squeeze of lemon and serve with rice.
Treat yourself and get some big tiger prawns. You can make them go further by running your knife down the back, once you remove the black line you can cut a bit further through but not all the way. This butterflies the prawns and gives more surface area for flavour and heat, it cooks quicker and tastes great.
